Vegan Baked Blueberry Glazed Donuts

Love donuts but hate how unhealthy they are? Try this healthy and delicious recipe for vegan baked blueberry glazed donuts!

I honestly wish you could taste these vegan baked blueberry glazed donuts because once you do, you’re not going to believe that these yummy babies are vegan! They are moist, tender, and packed with fresh, plump blueberries. So much so that when you bite into a donut, the blueberries literally pop in your mouth!

Not only are they delicious, they’re healthier than deep fried donuts and even regular baked donuts. But don’t let the word healthy fool you! They don’t taste the least bit healthy! They have the same texture of regular baked donuts. You wouldn’t know that these vegan baked blueberry glazed donuts contain absolutely no dairy – in other words, no eggs, butter or milk! For those on a gluten-free diet, I’ve also included instructions in the recipe to help you adapt these donuts to be gluten-free.

So how did I get them to be this fluffy? I relied on a little science and combined baking soda with lemon juice . As you know from elementary school science, when sodium bicarbonate (the baking soda) is diluted with an citric acid (lemon juice), it reacts and releases carbon dioxide which makes the batter foam up and makes the donuts rise. Cool huh? Yes, I’m a bit of a science nerd!

Once baked up, the donuts are then dipped in an easy glaze which only takes minutes for the glaze to set up. When you take your first bite of the donut, you’ll get a slight crunch from the sugary glaze to reveal an inside that’s moist, tender and packed full of plump blueberries. If you’re like me, you’ll find it hard to limit yourself to just one donut!

So, if you love blueberries, you have got to make these vegan baked blueberry glazed donuts! They only take about 25 minutes from start to finish, including baking time and they’re perfect for breakfast. with a cuppa at break, or for an afterschool snack! Plus, it’ll give you a good reason to use that 10lbs of blueberries you just picked up from the farm!

HEALTHY AND DELICIOUS VEGAN GLAZED BLUEBERRY DONUTS

Makes 6 donuts
  • 1-1/4 cup
    (150g) All-Purpose Flour (for Gluten-Free Diet, Substitute with Gluten-Free Flour on a 1:1 Basis)
  • 3/4 tsp
    (3g) Baking Powder
  • 1/4 tsp
    (1g) Baking Soda
  • 1/4 tsp
    Ground Cinnamon
  • 2 tbs
    (30ml) Vegan Butter, Melted and Cooled
  • 2/3 cup
    (130ml) Oat Milk or Non-Dairy Milk (This is My Favorite Brand)
  • 1/3 cup
    (65g) Brown Sugar
  • 1 tsp
    (5ml) Vanilla Extract
  • 1 tsp
    (5ml) Lemon Juice
  • 1/2 cup
    (50g) Fresh Blueberries, Washed and Dried
  • 1-1/2 cups
    (180g) Confectioners Sugar
  • 1 tsp
    (5ml) Lemon Juice
  • 1 + 2 tbs + tsp
    (40ml) Water
Directions:

Instructions:

  1. Preheat oven to 375 degrees Fahrenheit.
  2. In a bowl, add the flour, baking powder, baking soda and ground cinnamon. Whisk to combine. Set aside.
  3. In another bowl, add the melted vegan butter, oat milk (or any non-dairy milk), brown sugar, vanilla extract and lemon juice. Whisk to combine.
  4. Grease donut pan well and set aside.
  5. Add the blueberries to the wet ingredients, then add the dry ingredients. Using a rubber spatula, stir mixture until there are no streaks of flour. Do not over mix. Lumps are okay.
  6. Transfer batter into a piping bag or large freezer bag. If using a freezer bag, snip one corner, large enough to fit a couple of blueberries. Evenly pipe the batter into the donut tins.
  7. Transfer the donut pan into the oven. Bake at 375 degrees Fahrenheit for 2 minutes. Without opening the oven door, turn the oven temperature down to 350 degrees and continue baking for 10-12 minutes or until donuts are golden brown.
  8. Remove donut pan from oven. Allow the donuts to cool for 2-3 minutes before inverting the pan over a baking rack. Allow donuts to fall out of the pan. Should they not fall out easily, rap on the bottom of the pans with a spatula to loosen the donuts. That should help them fall out of the pan.
  9. Allow the donuts to cool on a baking rack.
  10. While donuts are cooling, making the glaze.
  11. For the glaze, add powdered sugar, lemon juice and water to a medium size bowl. Stir mixture well until no lumps remain.
  12. Dip the donuts into the glaze, lift and allow some of the glaze to drip off, then place the donuts, glazed side up, on a baking rack to set up. Enjoy!
