Here’s the ultimate, low in added sugar, chocolate peanut butter banana donuts! If you love banana bread, you’re going to love this recipe!  Think moist banana bread with chocolate chips in donut form that’s dipped in a Peanut Butter and Chocolate swirl glaze!  Talk about heavenly!  It’s truly what every donut dreams to be when they grow up!!!

This recipe is low in added sugar! The entire recipe consists of 2 tablespoons of Confectioners Sugar which is used in the Peanut Butter Glaze.  If you prefer not to use any sugar, you can.  Note however, that the glaze will be sticky as opposed to dry to the touch.

THE ULTIMATE LOW-SUGAR CHOCOLATE PEANUT BUTTER AND BANANA DONUTS

Makes 6 but recipe may be doubled to make 12.

    Ripe Bananas
  • 1
    Egg
  • 30 g
    (1/8 cup) smooth peanut butter
  • 1 tsp
    Vanilla Extract
  • 30 g
    (1/4 cup) All Purpose Flour
  • 1/2 tsp
    Baking Powder
  • 1/8 tsp
    Salt
  • 85 g
    (1/2 cup) Chocolate Chips
  • 43 g
    (1/4 cup) Chocolate Chips
  • 1 tsp
    Coconut Oil
  • 30 g
    (1/4 cup) Peanut Butter
  • 2 tbs
    Butter, Melted
  • 1/2 tsp
    Vanilla Extract
  • 2 tbs
    Confectioners Sugar
Directions:

Instructons:

  1. Preheat oven to 350oF.
  2. In a medium size bowl, add peanut butter and banana. Mash to combine.  Add egg and vanilla extract and mix well.
  3. In a separate bowl, add flour, baking powder, salt and chocolate chips.  Whisk to combine.
  4. Add dry ingredients to wet ingredients and stir with a spatula until mixed through. Do not over mix.
  5. Pipe mixture into well-greased donut pans.
  6. Bake for 13 to 15 minutes until a toothpick test comes out clean.
  7. Remove from oven, let cool in donut pan for a few minutes before removing from pan.
  8. While donuts are cooling, prepare the glaze.  In a microwavable bowl, add chocolate chips and coconut oil.  Microwave on medium in 20 second intervals, stirring in between, until chocolate is fully melted and smooth.  Set aside.
  9. In another bowl, add the peanut butter, melted butter, vanilla and confectioners sugar.  Stir until smooth.  Drizzle melted chocolate over the peanut butter glaze. Do not stir.
  10. Dip donut into the glaze, remove and place glaze-side up to set.  Glaze will set in about 15 minutes.
  11. Serve at room temperature. Enjoy!
