  • 3 cups (360g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 1/2 tsp (2.5g) fine sea salt
  • 4 tsp (20g) baking powder
  • 2/3 cup (160ml) vegetable oil
  • 2 large eggs
  • 1 cup (240ml) milk
  • 1/3 cup (80g) Greek yogurt
  • 2 tsp vanilla extract
  • 2 cups (300g) fresh or frozen blueberries
  • 4 tablespoons turbinado sugar (for the crunchy topping)

For the Icing Sugar Glaze:

  • 1 cup (160g) powdered sugar
  • 2-3 tbsp (30-45ml) milk
  • 1/2 tsp (2.5ml) vanilla extract

Instructions:

  1. Preheat and Prep: Preheat your oven to 450 degrees Fahrenheit (220 degrees Celsius) and line a 12-cup muffin tin with paper liners or grease with nonstick spray.
  2. Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, salt, and baking powder.
  3. Combine Wet Ingredients: In a separate bowl, combine the vegetable oil, eggs, milk, yogurt and vanilla extract. Mix until well blended.
  4. Create Batter: Pour the wet ingredients into the dry ingredients and stir just until combined. Do not overmix. Batter will be thick. Gently fold in the blueberries.
  5. Fill the Muffin Tin: Divide the batter evenly among the muffin cups, filling each about 3/4 full. Sprinkle the tops with a little turbinado sugar for a delightful crunch.
  6.   8. Glaze the Muffins: Once the muffins are completely cool, brush the icing sugar glaze over the tops. Allow the glaze to set and dry firm, which should take about 15-20 minutes.
