These insanely light, sweet, crisp morsels are my absolute favourite sweet treat! They are also super easy to make too and yet look so impressive! Serve a plate, piled high, of these sweet bites with dessert at the end of a dinner party and watch your guests oooooh and aaaaah!
- 2Egg Whites
- 1/4 tspCream of Tartar
- 1/2 cupFine Sugar
- ½ tspVanilla Extract

- Preheat the oven to 200 degrees F. Line 2 baking sheets with parchment paper.
- In a bowl of a stand mixer outfitted with the whisk attachment, whip egg whites and cream of tartar until foamy. Add sugar a teaspoon at a time, while continuing to whip at high speed. Once all the sugar has been added, add vanilla extract. When the mixture reaches stiff peaks and is shiny, stop mixing, and transfer the mixture to a large pastry bag.
- Pipe the meringue out onto the prepared baking sheet using a large star tip.
- Place the meringues in the oven and place a wooden spoon handle in the door to keep it from closing all the way. Bake for 3 hours. Meringues are done when they can be removed from the parchment paper easily. Allow cookies to cool completely before storing in an airtight container at room temperature. Enjoy!
